I just love using this pan...is wonderful for crepes but I use it especially for pancakes and egg breakfasts. Everything gets done so nicely. I have always had an issue making a good pancake...this pan has solved that for me! I would highly recommend!
Not at all evil!
I do have a gas cooktop, and this pan is working beautifully for me. The first time I made pancakes with it, I used a bit of butter in the pan and cooked three small pancakes at a time in the pan. The first batch didn't brown properly, so I adjusted the heat a bit. The next two batches came out with good color, cooked through, and fluffy. The only problem I had was that the pan is so non-stick that flipping them one at a time was a challenge. The spatula was pushing the pancakes right into each other as I tried to get it under one of them to flip it.
Today, I made pancakes again, but just one big one at a time and I did NOT butter the pan. The pancakes cooked perfectly - good color, cooked through and fluffy. The lack of butter in the pan didn't detract at all from the texture, although I missed the slight flavor it imparted to my first pancakes.

Unless you are using a Gas Cooktop, you will not like this! The stockholm series is much better. It does cost a bit more, but the coating lasts much longer and the heat is more even. For the cost diff. you will thank yourself for making the upgrade. The San Francisco collection is made in a different factory, under different quality control and license agreements. I have tried 7 different sets of pots and pans over the past 2 years trying to find something that will work on my Halogen Cooktop. This is the only one I have found yet that works time after time without having to cook on high heat, or cook for long periods of time on low heat. Sunny Side eggs should never take 30 minutes, nor should they take 2 minutes and be hard; five minutes with this series of pans and they are perfect every time, plus they slide right out. Ive never had to use cleaners with this, two or three wipes of a soft sponge (not the scrubby part) and the pan is ready to go again. All I can say is...
